Fast forward to today, and Jon Moxley hardly resembles Dean Ambrose. Other than entering through the crowd, he's unrecognizable. Moxley also carried the promotion during one of the most uncertain times in the world as the All Elite Wrestling Champion.
The former champion would be a terror to face in the game. Due to his achievements and physical evolution, Moxley would definitely be one of the highest rated wrestlers in the game.

Kenny Omega would undoubtedly be the highest rated wrestler in the game. He has the star power, the in-ring ability, and the presence of a top star and compared to the rest of the roster he's the best.
The Cleaner became The Belt Collector in 2021 and had one of the most dominating championship runs in professional wrestling. Omega is currently healing from injuries, but when he recovers, he'll likely pick up from where he left off.
Kenny Omega is one of AEW's best wrestlers and probably one of the best in professional wrestling today. Because of all these factors, it would be odd for Omega to not be the highest rated wrestler in the game.
