Boruto has characters with very strong abilities but very few can compete with Eida's Omnipotence. This allows her to alter the status quo and switch the title character and Kawaki's roles in the minds of everyone. This is a basic yet overwhelmingly powerful ability that even she can't control to her fullest, leading to a potential theory involving her and her brother Daemon's unchanged appearance in Two Blue Vortex.
These two characters were once regular humans and haven't aged after the time-skip while Kawaki and Code, who were also normal people experimented on, have grown older. This could be a stylistic decision for the Boruto manga and their character designs. However, it could also mean that this is connected to Omnipotence and another angle of this power.

Boruto could explain Omnipotence's powers even further through Eida and Daemon's appearances
It has been stated in the series that Eida can alter people's perception of reality through Omnipotence. This was evidenced by the fact that now most characters in the series think that Kawaki is the protagonist and vice versa. However, this power could also be the main reason why she and her brother Daemon haven't aged at all during the time-skip of Two Blue Vortex.
There is the fact that Omnipotence cannot influence her blood relatives from a mental perspective but it could perhaps have an impact on their biology.
It is likely that Eida, at least from a subconscious angle, didn't want to grow older and the same could apply to Daemon. This could explain why they look exactly the same after the time-skip.
Some might argue that the two characters are not aging because of a stylistic decision by author Masashi Kishimoto since both of them have unique looks in the series. However, the full extent of Omnipotence is yet to be displayed, so all bets are off when it comes to the reach of this ability.
The ramifications of this theory
The idea of Daemon and Eida not aging in Boruto is made even clearer when looking at Kawaki and Code. Much like the siblings they too were experimented on and have aged during the time skip. It could be argued that the experiments both Eida and her brother went through are different, leading to different results, but there should be an explanation for them not aging.
If this is something that Eida has made happen by accident, it could provide some interesting insights into her mindset. Perhaps she wants to keep feeling desired and wants to remain forever youthful and these thoughts have an indirect ramification on Daemon. This could make sense when considering the nature of her character and how she can't control her powers.
Final thoughts
There is a fair argument to be made that Eida and Daemon have remained with their designs unchanged in Boruto simply because of preferences by the mangaka. However, the idea of Eida, at least in a subconscious manner, keeping herself and her brother from aging with Omnipotence could be a very interesting direction to take with her character.
