Jujutsu Kaisen author Gege Akutami made some correct decisions throughout his run, and one of the finest was depicting the majority of sorcerers as good people who have to deal with the realities of a harsh world. While there are bad individuals in the Jujutsu society, such as Naoya Zen'in and Mei Mei, the vast majority of the cast are fundamentally good people who are trying to help.
Even some of the most popular Jujutsu Kaisen characters like Satoru Gojo, who some have viewed as morally dubious, have shown that they are good people, as evidenced by his prioritizing human lives in the subway of Shibuya. Some obvious examples include Yuta Okkotsu and Yuji Itadori, who probably represent the kindest and most noble among the sorcerers.

Explaining why Akutami made the right choice by depicting sorcerers in Jujutsu Kaisen as good people
There is no denying that Jujutsu society has some negative examples, such as Naoya Zen'in's sexism and selfishness and Mei Mei's child abuse and greed, who have committed dubious acts throughout their time in this unique profession. However, author Gege Akutami depicts the vast majority of sorcerers as good people and a great example of that is the strongest of the modern era, Satoru Gojo.
While Gojo has some obvious character flaws, such as being way too carefree and arrogant, he is fundamentally a good person who cares for the well-being of his students and society. His fight in Shibuya against the Disaster Curses highlighted how he didn't want to risk civilian lives, which is ultimately what cost him and got him sealed, coupled with Kenjaku's use of Suguru Geto's body.
The reality of this world is cruel, with a lot of innocent people dying and some good-hearted sorcerers dying young, but what defines these individuals as kind is how they react. People like Nanami Kento, Kusakabe, Utahime, and many more adults continue to try to help society and their students, which says a lot about their character.
Yuta and Yuji represent positive change in society
One of the initial themes in Jujutsu Kaisen was to establish younger sorcerers who have a stronger moral compass, which is perfectly reflected by Yuji Itadori and Yuta Okkotsu. It makes a lot of sense that they are the protagonists since they represent the change in Jujutsu society, and they remain kind and noble despite their hardships.
Naturally, this doesn't mean that every sorcerer is a good person. Some have descended into insanity, with Suguru Geto's fall from grace being a prime example. There are also some questionable decisions, such as using Gojo's corpse in the battle against Ryomen Sukuna, but it is also worth pointing out that they used this as a last resort since the entire world was at stake.
It is also very telling that Yuji managed to win at the end and defeat the King of Curses while saving Megumi Fushiguro, which meant that he didn't have to compromise his moral code. In a way, it is a message that his way of doing things is the right way.
Final thoughts
Corruption and evildoers are something every single demographic has, and sorcerers in Jujutsu Kaisen are no different. However, when push comes to shove, the vast majority of characters in this have proven to be quite good and focused on helping people.
