Boruto Two Blue Vortex chapter 11 came out on June 21, 2024, and Sarada has still not used her Mangekyou Sharingan as if she is not even aware that she possesses such an overpowered kekkei genkai.
The chapter spotlighted the protagonist who saved both Himawari and the Uchiha child from the claws of the God Trees. Jura bested Himawari after performing well with her newly awakened Kurama chakra. The Uchiha child was overpowered by Hidari, who outclassed her in every jutsu technique.
But the strange thing about the battle between Sarada and Hidari is that Sarada is not using her Mangekyou Sharingan, which she awakened after Eida used her Omnipotence on Boruto. The reason behind this could be that she is not aware of it and could use it in an emergency, instinctively, where the life of someone dear to her gets endangered, which is the protagonist.

Boruto Two Blue Vortex: Exploring the chances of Sarada using her Mangekyou Sharingan in the future
In Boruto Two Blue Vortex chapter 11, Himawari continued her fight against Jura after she healed Inojin's fatal injury and asked the InoShikaCho trio to leave. After they left, she had a heated battle against Jura, where she also used the Tailed Beast Bomb. But the God Tree unleashed a speck of his true strength and overpowered her.
Sarada rendered Hidari motionless and kept asking about his identity. The God Tree got annoyed and told her he had come to the Hidden Leaf Village to find out about his true identity. He then sneakily closed in on her after impaling every other shinobi.
Fortunately, Boruto made a surprise entrance. He first saved Himawari from Jura and used Flying Raijin Jutsu to teleport near Sarada. He then saved Sarada as both God Trees cursed the protagonist for meddling in their matter.
During this fiasco, Sarada hasn't used her Mangekyou Sharingan. In fact, since the start of Boruto Two Blue Vortex, she hasn't even awakened it once. After the Eida Omnipotence incident during the Boruto: Naruto Next Generations, the Uchiha child was one of the few people who remembers Boruto's true identity.
As Sasuke's memory was also altered, Sarada begged him to save the protagonist, and while she did so, she awakened her Mangekyou Sharingan, surprising her father. Since that time, she hasn't used her awakened kekkei genkai.
So, the basic deduction would be that she is not aware of her awakened kekkai genkai, as she was overwhelmed with emotions when she awakened it. So, this brings the question of when would she use it.
Currently, the protagonist is the only one who can go against the God Trees, Jura and Hidari. These two have hardly awakened a speck of their true powers, meaning that Boruto will face a hard time against them.
So, this could be where Sarada instinctively awakens her Mangekyou Sharingan, to help her friend. If Boruto has a chance against God Trees, that is only through an awakened Karma, meaning letting Momoshiki take over his body.
Even in this scenario, Sarada's Mangekyuo Sharingan awakening makes sense as she could cast a genjutsu on Boruto, rendering him motionless for the time being. This would stop Momoshiki from wreaking havoc. So, the author could be holding back on writing Sarada using her Mangekyou Sharingan powers for a better purpose, rather than a random one.
