One Piece has a lot of iconic characters but very few are as important as the Monster Trio made out of Luffy, Zoro, and Sanji. While the Sun God Nika has been shown in One Piece in different forms, the most common one sees him wielding a sword and a spear, which could work as thematic representations of Zoro and Sanji. This might seem far-fetched to some but it does add to their characters and also further cements their roles as instrumental allies in Luffy's quest to become the Pirate King.

Explaining how the Sun God Nika's portrayal in One Piece depicts Zoro and Sanji as Luffy's sword and spear respectively
The Sun God Nika has been depicted at times in the story as a figure wielding a sword and a spear, which could serve as thematic representations of Zoro and Sanji respectively. They have often been regarded as Luffy's "Wings" and biggest supports, so it does make sense that the story would highlight them in that particular manner.
The sword concept fits with Zoro because his main role in the crew is to fight, therefore he is a lot more connected with the goal of protecting Luffy. This is also shown through the way he is very level-headed and a bit more pragmatic, which came into full display during the events of Water 7 as Usopp was leaving the crew, and also through his loyalty toward his captain.
Sanji, on the other hand, is a bit more complex, as the spear could also represent his father, who wields a similar weapon. Furthermore, as his father was cruel and destructive, Sanji not only fights but provides food for Luffy and his crew, much like how a spear can be used for fishing and not combat.
The roles of Sanji and Zoro in the story
Both Zoro and Sanji have cemented their roles as two of the most popular characters in the entirety of One Piece. This is due to their loyalty to Luffy but also because of their dynamic in the series. Zoro and Sanji don't get along, which often leads to hilarious moments in the story, but they have proven to back each other when it matters the most.
While they have different personalities, goals, and values, they are two of Luffy's biggest allies and friends. That is shown through Zoro's eternal loyalty toward the Straw Hats' captain and Sanji's desire to be with the crew, which was fully explored during the events of the Whole Cake Island arc where the entirety of his past was shown to the audience.
Final thoughts
There is no denying that, in many different ways, Zoro and Sanji have served as Luffy's sword and spear throughout One Piece. While their symbolism to the Sun God Nika portrayal could be simply speculative, it is still true that they have been the two biggest assets that the Straw Hats' captain has had in his crew for a lot of different reasons.
