One of the biggest signs that the Elders of the Gorosei weren't alive during the events of the Void Century is how they talk about Nika as if he was something they didn't witness. Rather than adding their personal experiences to the matter, they talk about Nika as if it were a legend or a myth, which suggests they never witnessed that with their own eyes.
Furthermore, that notion is developed by the fact they talk about the formation of the World Government as if they weren't involved in said process. It is worth pointing out that this regime was created by Imu and twenty royal families, with many of them turning into Celestial Dragons, so it seems that the Gorosei didn't have anything to do with this process.
This adds to the theory that they are demons or hosts of demons who have lived for a long time, hence why they have managed to be the face of the World Government. Although, of course, it is worth pointing out that author Eiichiro Oda has not given these characters a proper backstory.

The Elders of the Gorosei are an extremely important element in One Piece since they have been the visible head of the World Government and have also proven to be responsible for several major events in the story. However, the story is still yet to explain a lot about their character, especially how they came to be and why.
As mentioned earlier, there has always been the theory that these five men are not truly human and are demons, with Imu having created them to serve a specific purpose. It is also worth pointing out that the manga has not explained why Imu chose to have them as the visible leaders and what this represents to the Celestial Dragons, along with the concept of their sacred army, the Holy Knights.
Final thoughts
There is a very good chance in the One Piece manga that the Elders of the Gorosei are not human, and this could explain why they weren't alive during the Void Century. The biggest question would be why they were created and how they came to be.
