She attended Adolfo Camarillo High School, where she averaged 24.2 points, 13.2 rebounds, 3.5 steals, and 2.1 assists per game. During her senior year, she averaged 34.2 points per game, 15.7 rebounds, 4.7 steals, and 2.6 assists. After a stellar senior year, the Ventura County Sports Hall of Fame named her the female athlete of the year for the 2021–2022 season. In 2022, Jaquez began her NCAA basketball career with the UCLA Bruins.

Gabriela Jaquez made two starts during her first season. Nevertheless, she averaged 17.4 minutes per game and participated in all 37 of the Bruins' games. Gabriela became an important part of UCLA's depth in her sophomore year. She averaged 10.0 points, 5.6 rebounds, and 1.6 assists per game as a bench player.
