Hailing from Dalzell, South Carolina, Simon attended Crestwood High School and was rated as the 44th-best prospect in the state, according to the official website of the Gamecocks. He joined the Western Kentucky Hilltoppers (WKU) in 2019 and played 13 games, making 30 receptions for 430 yards and four touchdowns in his first season with the team.
