There are three Beastial Knights in Enir-Ilim of Elden Ring Shadow of the Erdtree, each with an elemental specialty. Follow these strategies to get an upper hand on them:

Lightning Knight: Equip ranged weaponry like throwing knives or a bow. Provoke the knight's attention, then swiftly retreat to the nearby ledge overlooking a tree. Leap onto the branches and turn to face the knight. While you can reach the branches, the knight can’t. Use this exploit to spam all kinds of ranged weapons you have to deplete its health. If your target moves out of range, go back to the ground, provoke, and repeat the tactic.

Frost Knight: Lure one of these Beastial Knights back towards the area where you previously fought the group of armored birds, just before the Site of Grace. It’s quite far, so be careful and agro it periodically to keep it following you. Guide it to the ledge above the bird arena and wait for him to fall. Once he drops down, he'll be trapped, unable to come back up. From your vantage point, you can safely assault him with arrows or knives.

Wind Knight: There is no easy exploit, but your Mimic Tear can save you here. Summon your doppelganger to draw the knight's aggression while you strike from behind. If you become the focus of the knight's attack, create distance until your Mimic regains its attention, then resume your assault.
