Nikica Jelavic continued his goal-scoring form as he showed composure and skill to score his fourth goal of the pre-season after fine work from Mirallas to pick him out in a crowded penalty area.
Mirallas was again involved as he claimed the second goal thanks to a goalkeeping howler from Real Betis‘ Stephan Andersen. Mirallas floated in a speculative cross after a short corner and it seemed to be an easy catch for the ‘keeper before he inexplicably fumbled it into his own goal.
Brian Rodriguez scored a last minute consolation for the Spanish side, slotting in after the ball had ricocheted off a few bodies in the box.
There was, however, a casualty for Everton and Roberto Martinez as midfielder Darron Gibson limped off with a knee problem before half-time.
Everton will kick off their Premier League campaign with an away trip to Carrow Road as they face Norwich on Saturday.
