N'golo Kante is the arguably best defensive midfielder in the world and is quite dogged in his approach. He is generally someone who hangs back along with the centre-backs and guards his team's half. However, he showed his versatility last season, when Maurizio Sarri played him in a more central role and pushed him forward.
