There are many enchantments in the game such as Protection, Fire Protection, Mending, etc. But Riptide and Impaling are very special for many reasons. The first reason is that they can only be applied to the trident weapon. The trident weapon is also special in itself as it cannot be crafted, only obtained from some drowned mobs carrying it.
The Impaling enchantment makes the trident more powerful but with a caveat. In the Java Edition of Minecraft, this enchantment deals extra damage on aquatic mobs while in the Bedrock edition, it deals extra damage to mobs in water.
What makes Impaling even better is that you do not have to grind too much to get this. You can get it by fishing, opening loot chests, using the enchantment table, or trading with a librarian. Trading and using the enchantment table are the easiest and recommended methods of getting the Impaling enchantment.
The Riptide enchantment for tridents is even better as it gives you the superpower to be propelled in the direction you throw the trident at. The only caveat here is that it only works underwater or in the rain when there is water around you. This is very similar to having a superpower like Thor, albeit underwater.
Getting Riptide is very similar to getting Impaling in Minecraft. You can either use the fishing rod and hope that it pulls out the enchantment book or find loot chests that contain the enchantment. The other two options are trading and using the enchantment table. While it is possible to get Riptide from the enchantment table, the odds are very low.
Hence, if you want to get the Riptide enchantment, the best route to go for is trading with a librarian. Upgrade the librarian to get better deals and you might find the best version of it (Riptide III) easily.
