Minecraft's trial chambers are by far the largest part of the 1.21 update. The trial spawners within them contain the breeze mob, as well as both versions of trial keys needed to open regular and ominous vaults. These are the loot containers that contain the best trial chamber loot, including the heavy cores needed to make maces and the exclusive wind burst mace enchantment.

How to make a very simple trial chamber breeze spawner farm for Minecraft 1.21

This simple breeze trial spawner farm is incredibly cheap. The most expensive aspect of the farm is the three Minecraft hoppers used to collect items. Other than this, the farm only uses a handful of building blocks, slabs, and water source blocks to function.
1) Find a trial chamber
Before you can even think about making a trial spawner farm, you'll need to track down a trial chamber. As underground Minecraft structures, they can be hard to randomly stumble across, even if they are quite large.
Thankfully, Mojang accounted for this and added a cartographer trade for a Minecraft trial chamber map. These items will point you directly to the nearest trial chamber.
Once in a trial chamber, you'll need to track down a breeze spawner. Any non-climbing mob spawner will work, but the breeze is used to collect breeze rods. These are needed to make a mace and can also be made into useful Minecraft wind charges. Make sure to defeat any of the surrounding trial spawners as well, so that you can build in peace.
2) Build a room
The first step to actually building the farm is to make a room around the Minecraft breeze spawner. Leave a single block around the trial spawner open, and then make a completely sealed-off room. Leave a single block open on the front of the farm. This will allow the trial spawner to see you and activate.
3) Punch out the floor
You'll next need to dig out the floor around the trial spawner. Dig down at least three blocks. Breeze mobs can't take fall damage, so it doesn't matter how far the drop is, but it needs to be a minimum of three blocks.
4) Add the collection system
You'll next want to add in a collection system. Break four blocks in a T shape so that the chest in the lower part of the T shape can be accessed from outside of the farm. Fill the other three blocks with hoppers leading into this chest. This is where the breeze mobs and farm drops will be collected. Due to the long cooldown in between runs of the farm, only a single chest is really needed.
5) Place the water and slabs
Next, place down top slabs over the chest. This will allow the chest to be opened while still obscuring the hostile Minecraft mob's view out of the farm. Then, place water source blocks along the back of the farm to push things over the hoppers. Finally, add a few more slabs around the collection area to make sure that the breeze can't see out of the farm.
6) Wait for the cooldown
Unfortunately, you'll need to wait for the full 30-minute cooldown before the farm can be tested. Once this period has passed, move in front of the gap you left in the initial room. The Minecraft trial spawner should see you and activate, spawning breeze that then fall into the water and get pushed over the hoppers.
You can then move down to the collection area to kill the breeze. Their breeze rods will drop into the hoppers and be collected. Once enough breeze mobs have been killed, the trial spawner's loot will also be spit out and collected by the hoppers.
