Curing a zombie villager has not changed at all, even in Minecraft 1.21. The process has been the same ever since the feature came out. While you can find normal villagers dwelling in villages, a few villagers spawn as zombies and are hostile towards you. Instead of killing them normally, however, there is a method to cure these villagers to get some of the best discounts on their trades.
Here is a short guide explaining how you can cure a zombie villager in Minecraft 1.21.
Steps to cure a zombie villager in Minecraft 1.21

Before trying to cure a zombie villager in Minecraft 1.21, you must first gather two necessary items: a Splash Potion of Weakness, and a Golden Apple.
The potion can be brewed by combining Fermented Spider Eye with an Awkward Potion. Meanwhile, a Golden Apple can either be looted from chests in naturally generated structures or be crafted with eight gold ingots and one apple.
Players will also need some beds and iron bars.
2) Find a zombie villager and trap them
To cure a zombie villager in Minecraft 1.21, you must first try to trap it. This move can be quite tricky as you have to create an enclosed area without taking too much damage from the hostile mob. The closed space can be made from iron bars and a few beds can be kept inside the confined space as well.
Remember to make a small opening through which you can interact with the creature.
3) Throw the splash potion of weakness on the hostile mob
Once the zombie villager is trapped, throw the Splash Potion of Weakness onto the mob through the opening of the confined room. As the potion's name suggests, it will weaken the mob, hence starting the curing process. Make sure to aim and throw the potion correctly so your character is not affected by it.
4) Feed the golden apple to start the main curing process
Once the zombie villager is weakened from the Splash Potion of Weakness, you can cautiously try to lure it towards yourself and feed it the Golden Apple.
This is the second major step in the curing process as the mob begins to shiver and emit particles. You will also notice the mob's eye color changing to red.
The curing process can take anywhere between 3600 and 6000 ticks. In each tick, there is a 1% chance that the game will accelerate the rate of curing.
The iron bars and beds placed around the zombie villager will increase the chance of decreasing the curing time by 30%. Hence, having beds and iron bars can be quite beneficial.
