First, players need to understand how Minecraft spawns mobs around a player. There are a set amount of different mobs that spawn in a chunk around the player. When a player moves, some mobs despawn, and others spawn in front of them.
For hostile mobs, a total of 70 of them can spawn around players in a chunk. Though the chunk is quite small when seen in the X and Z axes, it is massive on the Y axis since it stretches from Y level -64 to Y level 256. This gives the game ample area to spawn hostile mobs.
Light level is another game mechanic that determines the spawning rate of hostile mobs. Each block has a certain light level depending on whether the sun is shining on it or whether there is a light block near it. If the light level of a block is zero, hostile mobs will spawn on it.
Hostile mob spawning in caves reduces during the night
The reason why exploring caves in Minecraft is safer during the night, although the number of hostile mobs that spawn around a player in a chunk is the same throughout the day and night, is that these creatures will have more space to spawn during nighttime.
This is because the surface, which is usually illuminated by the sun, will have zero light level during nighttime. Due to this, the game will also spawn some hostile mobs on the Overworld's surface, distributing the mob spawns more equally in a chunk.
Hence, the caves will automatically spawn less hostile mobs during the night because out of 70 of them, many will now spawn on the surface.
