Minecraft has two editions: Java and Bedrock. Java was the first edition that Mojang released, while the Bedrock Edition came later with exclusive features and unique UI and gameplay mechanics. That said, some features remained exclusive to the Java Edition, including the ability to roll back and play any older version of the game.
An argument can be made that Minecraft's Bedrock Edition should also have this feature so that players can play previous versions.

Can help access features present on older Minecraft Bedrock versions
While Mojang has added many features to the Bedrock Edition, they have removed some as well. Since the edition does not support rolling back to an older version, players simply cannot access removed features that were present in the game once.
One such example is copper horns. These items were introduced to the game during 1.18.30 development and were added to a preview version 1.18.30.27. Unfortunately, they were soon removed from the update's stable release as the developers were not happy with it.
Since Bedrock Edition does not have a rollback feature, older preview versions and stable versions cannot be accessed and these old features are lost forever.
On the other hand, players can freely play any stable or snapshot version of Java Edition directly from the official launcher by creating a new installation. Players can go back to the first-ever stable version of the game from 2011 as well.
A rollback feature will make it possible to explore the history of the Bedrock Edition
Even though Bedrock Edition is relatively new, it has a long history of development. First, the Pocket Edition was officially released in 2016 with the Ender update, then the Bedrock Edition was released on consoles in 2017 with the Better Together update.
While some players might want a rollback feature to explore different removed features from the game, others might simply want to experience older versions of the game for a trip down memory lane.
Since Java Edition already allows players to do so, Mojang should make older Bedrock Edition versions accessible as well.
