Minecraft has unique building mechanics. It is a sandbox game that has surprisingly low graphics quality with the entire world built with blocks. Some blocks can be broken and obtained by players, and then can be placed anywhere in this world. Though the 15-year-old game can look massively unfinished because of its blocky nature, it is this aspect itself that makes its building mechanics great.
An argument can be made that Minecraft's building mechanics and aspects are still one of the best in the gaming industry.

Reasons why Minecraft's building experience is one of the best
Blocks can be placed seamlessly
When players first enter a new Minecraft world, they will notice that the entire world is made up of blocks, whether they are full solid cube blocks or half cuboid blocks.
Hence, when explorers mine a block and place it somewhere else, that block will fit perfectly with other blocks in the vicinity most of the time. All its sides will be flush with other blocks.
The fact that the entire game is made up of blocks, makes building in Minecraft extremely easy. Players need not worry about irregular natural terrain, their own building resources, and more since most of the building blocks will fit perfectly with one another.
The blocky nature of the game also makes it easy for players who are completely new to gaming.
Nearly endless building limit
Another major aspect of why the game's building experience is brilliant is that there is nearly no limit to building structures. While other games cap the limit for building structures in a particular territory, Minecraft allows players to build multiple massive structures almost in the entire map, which itself is nearly endless.
Even though there are vertical build limits at Y level 383, it is ample for players to create some of the biggest structures in a game.
Furthermore, when multiple players enjoy a server, there is no limit to how many buildings they can construct together or separately. If the server becomes heavy, they can always allocate more RAM and resources to the machine running the server for them.
In the past, popular servers like HermitCraft have showcased how several game content creators can come together and build their own massive structure in a single server itself.
Other games out there that run multiplayer servers often have a cap on per-player territory, or per-server limit, in order to maintain the levels to which players can go. This limit does not exist in Minecraft, allowing players to let their imaginations loose.
