She attended Eaglecrest High School where she established herself as a top-tier setter amassing 2,529 assists, 716 kills, 664 digs, 385 blocks, and 208 aces over 101 matches. She also earned her the Andi Collins Award as the best setter in the country. Poulter's collegiate career with the University of Illinois from 2015 to 2018 was equally remarkable. She chose Illinois early in her high school career. During her time at Illinois, she was twice an All-American, a Big Ten Setter in her last year, and took her team to the Final Four. Poulter's professional career began in 2018 when she started training with the senior US National Team. She contributed to the team's gold medal victories in the 2019 FIVB Volleyball Women's Nations League and the 2019 Women's Pan-American Volleyball Cup. She was named Best Setter at the FIVB Volleyball Women's Nations League and helped the US secure their first-ever gold medal in women's indoor volleyball at the Tokyo 2020 Olympics despite suffering an ankle injury during the tournament in 2021.

After signing with Igor Gorgonzola Novara for the 2022–2023 season, Poulter faced a significant setback due to knee injuries but made a strong comeback with the US National Team at the 2024 Volleyball Women's Nations League. She is also to take part in the 2024 Paris Olympics. Poulter is a founding athlete for League One Volleyball and will play for its Salt Lake City team in its inaugural season.
