#1 Universal Champion: Brock Lesnar

Now, this is a tough one. In a match that would most certainly be the main event, Brock Lesnar will be defending his Universal Championship against the man (not Becky Lynch, The Man's man) who defeated him for the same title at WrestleMania 35, earlier this year.
Lesnar won the title at Extreme Rules after he cashed in his Money in the Bank contract on Seth Rollins, much to the displeasure of many. For once, we can't rule out yet another victory for Rollins at SummerSlam, as he has been the so-called "face" of the company recently.
But it's hard to believe WWE making Lesnar the surprise MITB winner, only to lead to an underwhelming story like this which leads to him losing to Rollins again.
On the contrary, if Lesnar defeats Seth at SummerSlam, and someone like Drew McIntyre beats up Brock after the match, it would be a great ending for the PPV and would push him to the top of the food chain instantly.
Or maybe a Paul Heyman turn on Lesnar, realizing that his client is not "best for business", considering his new role as the executive manager of RAW.
