Although it was in a different match between two different performers, WWE used a count out finish between Tyson Fury and Braun Strowman at Crown Jewel. They didn't want Fury to lose in his first match after paying him so much. They also couldn't afford to let Strowman get pinned by a relative novice in the ring. In that case, it made sense to have a finish other than a pin or submission.
Lesnar will likely throw Ricochet all around the ring during their match. He's done that with Rollins, Bryan, Balor and everyone in the Royal Rumble. It's a certainty to happen. But there could be a point in the match where Lesnar gets frustrated and he just goes ballistic and attacks Ricochet. Someone else could also interfere as WrestleMania main-eventer Drew McIntyre is without a match at SSD.

While a DQ would be a little disappointing, it could give the WWE an excuse for Lesnar to defend the title again at Elimination Chamber in a few weeks. That show will need some major title defenses to go along with what seems like three Elimination Chamber matches. By having a disqualification finish, it would prolong the feud by another week or two and give Ricochet another shot at the title before 'Mania.
