While there are several solo ones, the co-op heists are the most fun. You can join other players or your friends and get down to steal valuables.

Co-op heists are interesting because you must communicate with your teammates and stay vigilant of their activity. Since the reward for completing such heists is also good, most players like to jump into them when they're bored of doing regular missions in the game.
