Gigantrite is the only source of Vitalstones in Throne and Liberty. It has a specific spawn time, so you'll need to wait for it to appear. You can also check the countdown timer to know when it'll become available.

During a flight, it shakes and drops various items. Look for its sparkling tail to confirm that it's shedding Vitalstones. However, the location of the item is different from where the tail hits the ground.

Hence, you need to chase the item, and the best way is to get onto Gigantrite’s back to have a better view from above. You need to look carefully at where it shed the item. It can easily be recognized as it comes inside a blue crystal material. Moreover, you can see the Divine Beast Crystal indicator to confirm what you are looking for.
