At the 2022 World U-17 Hockey Challenge, he led the tournament with 12 goals and ranked second in points with 20, helping Team USA to a first-place finish. In the 2023 IIHF World U18 Championships held in Switzerland, Eiserman recorded nine goals and two assists in seven games, securing a gold medal for the team. He continued his impressive performance at the 2024 IIHF World U18 Championships in Finland, again scoring nine goals and two assists in seven games, and earning a silver medal.

Cole Eiserman recently de-committed from the University of Minnesota and committed to Boston University. This change was announced on September 27, 2023 alongside the news that he will begin his college career from the 2025-26 season. His decision to join Boston University, which is just over an hour from his hometown, aligns with his desire to play closer to home. Boston University's roster includes Macklin Celebrini, the reigning USHL Player of the Year and another top prospect for the NHL Draft.

Playing for Shattuck-Saint Mary's 14U AAA in the 2020–21 season, Cole Eiserman scored an impressive 97 goals and added 57 assists for a total of 154 points in 50 games. This remarkable performance placed him among the top scorers in the school's history for a 15-year-old, with only Sidney Crosby and Jonathan Toews having recorded more goals for Shattuck's U18 team at the same age. After his tenure at Shattuck, Eiserman transitioned to playing for the USA Hockey National Team Development Program (NTDP).
