Prior to that, during his junior career, Johnston played for the Windsor Spitfires in the Ontario Hockey League (OHL), where he showcased his exceptional skills on the ice. His standout performances in the OHL earned him numerous accolades, including being named to the OHL First All-Star Team and winning prestigious awards like the Red Tilson Trophy, the Eddie Powers Memorial Trophy, and the William Hanley Trophy. In 2021, Johnston's professional hockey journey took a significant step forward when he was drafted 23rd overall by the Dallas Stars in the NHL Draft. Joining the Dallas Stars organization marked the beginning of his professional playing career, where he continued to impress with his prowess as a skilled center.

Johnston signed a three-year entry-level contract with the Dallas Stars on September 28, 2021 and made his NHL debut on October 13, 2022, becoming the first teenager to play for the Stars since 2018. Throughout his rookie season, Johnston made history by breaking the Stars' record for most goals scored by a teenager, finishing with 24 goals and 17 assists in 82 games. Johnston's career continued to ascend when he achieved his first NHL hat-trick on March 5, 2024, in a thrilling 7–6 victory against the San Jose Sharks.
