McCoy attended both the University of Tennessee and the University of Southern California. Initially, he enrolled at the University of Southern California and committed to playing college football for the USC Trojans. However, following his arrest for alleged domestic violence, he was suspended by the USC. Even after the charges were dropped, he was not reinstated to his former position in the team. Ultimately, he decided to transfer to the University of Tennessee and chose to represent the Tennessee Volunteers.
He played in 12 games during the 2022 season, representing Tennessee and recorded 52 receptions for 667 yards and four touchdowns. Additionally, he achieved three games surpassing the 100-yard mark during the Volunteers' impressive 11–2 season.
Unfortunately, the 2023 season was limited to only five games as McCoy suffered a season-ending injury, bringing his season to an end. He recorded just 17 receptions for 217 yards and a touchdown.
