The Roman numerals were adopted by Kansas City Chiefs owner Lamar Hunt to keep track of the championship. The first game to be assigned a number using this approach was Super Bowl V. An example from the NFL media guide provides further details:

The Roman numerals were adopted to clarify any confusion that may occur because the NFL Championship Game—the Super Bowl—is played in the year following a chronologically recorded season. Numerals I through IV were added later for the first four Super Bowls.

Surprisingly, Super Bowl 50 was the only Super Bowl game to not employ Roman numbers.

The Super Bowl L title was considered too unsightly and unmarketable by NFL ad designers, so they elected to use the number 50 instead of the Roman numeral L.
