His college football journey began in 2019 when he joined the University of Central Florida (UCF). In his freshman year, he took over as the starting quarterback in the final 12 games and led the Knights to a 10–3 season. In 2022, Dillon Gabriel started the second phase of his football journey by transferring to the University of Oklahoma, where he played for two seasons.
