As a true freshman, Bishop appeared in ten games, starting all six of them, and was selected to the Pac-12 Honorable Mention. Utah had a very successful season overall, reaching the Rose Bowl for the first time in school history. In his sophomore season, Bishop started 13 of 14 games, becoming a full-time starter for the first time in his collegiate career.
His 83 tackles led the squad, including an outstanding six for a loss. Bishop also got his first career interception, one of four passes defended this season. Utah won the Pac-12 for the second consecutive season before losing to the Big Ten's Rose Bowl representative. Following the season, Bishop was selected as an Honorable Mention for the All-Pacific-12 squad.
Bishop had another successful season in 2023. In 11 games (10 starts), he had 60 tackles (6.5 for a loss and 3 sacks). He had an outstanding 9.5 third-down stops. Bishop set a career-best with two interceptions and three pass breakups. Following the 2023 season, Bishop declared for the 2024 NFL Draft.
Bishop had an extremely busy draft preparation season, attending both the Reese's Senior Bowl and the NFL Scouting Combine. At the Senior Bowl, Bishop made an impact on referees. Jim Nagy, the Senior Bowl Director, lavished praise on the Utah safety, stating that "...[Bishop is] not getting out of Round 2," and that clubs were delighted by his interviews and testing. An excellent performance at the Combine confirmed this. His 4.45-second 40-yard sprint was tied for third fastest among safeties, and he had exceptional explosiveness in the Broad Jump and Vertical Jump.
